
This weekend the snow was falling over MN. I made a delicious, warming soup with the in-laws. The recipe is super, super easy. There is a short amount of prep work, but mostly it’s just waiting for the soup to cook. Here goes…
Ingredients (no measurements because it’s all up to you, gurrrrl or booooooy)
- Veggie broth
- Garlic
- Carrots
- Celery
- Red pepper
- Scallions
- Leeks
- Cannelli beans
- Asparagus
- Kale
- Thyme
- S & P for seasoning
The wonderful thing about soup like this is that you can alter it to your preferences, so put in as much of each ingredient as you’d like. You could probably eat the soup after around 30 minutes, but I’d say let it cook for about an hour so all the flavors have time to have a wonderful fiesta in the pot and the vegetables get nice and tender.
